Cora

The adventure began in May 1987, when Cora bought a small diner in Montreal’s Saint-Laurent district. After just a few months of operation, Cora changed the diner mission, making breakfasts her specialty. Combining fruit, cheese, cereal, omelettes, crepes and French toast, culinary magician Cora started a whole new breakfast concept in Quebec. Inspired by family traditions, customer requests and sometimes outlandish suggestions from her children, Cora designed her new breakfasts to coincide with the new trends toward healthy eating. One by one, she improved the traditional breakfast dishes and then conjured up a hundred others. Every new creation merited its own colourful illustration, which was then posted on the wall of the little Côte-Vertu diner. The menu imagery was used in the now-famous signage that still decorates each Cora restaurant.

Memphis Blues Barbeque

Southern Barbeque (pronounced baah-be-cue): meat is smoked for several hours at low temperatures over hardwood, resulting in a succulent and tender product. Ribs should be tender enough to pull apart yet still firm, with a nice pink smoke ring. The meat is never mushy, or falling off the bone. (This is a sign that they have been braised or boiled - taboo in the South.) Pulled pork is Pork Butt, slow cooked until you can pull it apart with a fork. Pile it on a white bun, add sauce & coleslaw, and you're in Pork Heaven. Beef Brisket is the trickiest to cook, it must be tender and juicy, yet have all the fat rendered out. This is messy food, folks - dive in, and eat with your hands.

The first thing you notice on entering the restaurant is the reclaimed heartwood pine table. This centuries old gleaming wood table sits on a trestle base reminiscent of the Kettle Valley trestles. The table features no nails or screws but uses mortise, dowel and tenon construction. The table was partially constructed on site with co-owner Audrey Surrao hammering in the final dowel. This work of art table was created by local woodworker, Will Brundula of Heartland Millworks.
